Well, dinner tonight was apparently a success. Once again, we had the sister-in-law and her roommate over. The meal was beef stew, from the crock pot, served in bread bowls (yes, I am obsessed with these things...get over it). The bowls I have on the site somewhere, so no repeat on the recipe. Tonight I kinda rushed them so they were not as good as normal. The beef stew is another adaption of a Betty Crocker recipe, but both the base recipe and my bastardization or it are simple.
Beef and potato stew:
1.5-2 lbs stew meat
1.5-2 lbs potatoes, chopped
1 small onion diced (or less if you have a silly onion hating wife)
~2 cups baby carrots
1 can (14 oz) beef broth
1 tsp olive oil
1/2 tsp garlic, minced
1 tsp cumin
1 tsp salt (I need to use more...but keep forgetting)
2 tsp pepper (same here)
1 bay leaf
1/2 cup water
2 tsp flourHeat the olive oil in a skillet. Add garlic and onions, stirring frequently, until onions are softened. (If you are lazy or, unlike my wife don't mind onions, you can skip this step. If so, forget the olive oil and skillet and just add the onions and garlic to the crock pot.) Toss your meat, spices, onions, potatoes, carrots, finally broth (ok, so everything but the flour and water) in the crock pot. Set it to low and leave for 8-9 hours (or obsess over it like me and stir and check seasoning every hour or so). About a half-hour before serving, combine the water and flour together to make a very, very thin paste substance. Once you got all the lumps out, stir it into your stew. This helps to thicken up the broth. Inflict it upon others when you are finished. make sure they eat first, if they don't spit it out, or like die, it is safe to eat. Enjoy.
For desert, yeah, I ripped this one off and changed it as well. I read about it on Katie's page and pulled the recipe from foodnetwork.com. It is a whole apple strudel. The only change I made to the recipe as I used graham crackers crumbled up instead of oats (because the wife and oats are not friends...never realized how much I change stuff to suit her), and to be honest, I think it would be better this way. They turned out really well. I was quite pleased with them. The only changes I might make when and if I make it again, is to cook them just a little longer, and maybe take a fork and poke holes along the inside so the honey got more in the actual apples. Oh well, it was good, got many complements, I am happy.
Oh, and next time, the girls are cooking for us! Will have to convince them to leave me the recipe so I can post what ever the hell they fix up here.
